Finally i got to bottled my coopers stout. Ive never known a brew like it, fermented like a volcanoe, coming up thru airlock & just making a mess. Bottled after 10 day , now the waitng begins. Any1 know how long to leave it before sampling 1. Id really like to let them mature but just want to sample 1, as it looks so Good...... :D

Within the first week 20 bottles of mine had gone!

Tasted beautiful, split 50% DME 50% Brewers Sugar.

Going to drink rest next week, so bottle for 3 weeks and see.

i did the coopers irish and over primed mine, :( (used 100g for 21l), it actually tasted nicer out of the fv, flat, then a week in bottles (its already somewhat carbed at this point :-| ) think going to have to wait a fair while longer, still drinkable.

(i put this down to "carbonation aiding taste" as in the flaws in at this early stage)

big head with little retention, made of visible bubbles.

getting pissed is a fine way of neutering ones tastebuds though!

If you let it age in the bottle for a month, you'll like it a lot better.
Secondary FV: As yet unnamed Weizenbock ~7%
Bulk aging: Soodo: Grocery store grape juice wine experiment.
Drinking: Mostly Canadian whisky until I start brewing again.

there lies the conundrum of wanting to get pissed vs letting it condition, i also have no money to buy shop beer either!

quite a predicament !
