Brewferm Ambiorix - Alternative method?

Hi homebrewers,

I got a final kit I'm gonna brew, the Brewferm Ambiorix (which I never drank before).
Since I feel like experimenting have some leftover stuff I want to use for this, I was wondering if these are good ideas...

I got a 15 liter glass fermenter which I want to use.
The kit is meant to make 15 liters as well, but off course I need some empty space in there. How much room does the beer need?
In other words how much liter water can I approximately add, and how will that affect the beer taste?

Also Im thinking about using 50% Lyles Golden Syrup (got that lying in the cupboard) and 50% Dextrose. Would this make any difference with 100% Dextrose?

Lastly I got 15gramms of EKG hop pellets in my freezer leftover from an IPA. Will this make the overall taste weird or too bitter for its own good?

What yall think?

I have just started drinking a batch of this ale which was bottled on th 2nd of January this year. I used a jar of H & B malt extract and 700g of medium candi sugar and 20g of hop pellets made up in a cafetiere and steeped for 15 mins. It is a very interesting brew and I will play again with this kit. As stated it is quite an acidic brew with a malty after taste, great if you like hops. I know lot of folk use golden syrup with good results with brewferm kits so you should be ok.

With regard to your head space you could use say 10 litres of water and top up after a day or so as the brew ferments.

Thanks Wonky...Looking forward to this brew, heard good stories about it. I was hoping to balance out that acidity with the sugar and hop pellets too.

Thinking about it, the glass fermenter says 15L on the bottom, but that's probably already calculating headspace...We'll see! Otherwise I'll see how far I can take it...
