Coopers SPARKLING ALE

Has anyone brewed this one with a lot less fermentibles?

I brewed one up in March and its now tasting great and strong (very strong :shock: )

It seems a really nice hoppy kit with citrus overtones....but too strong. Would the balance be out if brewed with say 1kg Malt and maybe 300gs sugar?

any thoughts?

No it would be fine. A tad more bitter perhaps, but still tasty I'd imagine.

You could leave out the sugar too. The point of the simple sugar in the original recipe is to "dry out" the beer because it uses ~1.5kg of malt. If you're just using 1kg spraymalt you don't really need the sugar - it will just raise the ABV and thin out the beer. You could also use 1kg of malt and half the amount of simple sugar (250g).

I've done it a few times with 1kg of beer enhancer.
I've also dry hopped with Hersbrucker.
Lovely beer!

Going to do with just the 1.5 kg of malt extract and aim for about 4.8ish avb :-)
