Do I take this reading before I add the yeast? I've had some skewed opening readings which should result in pretty weak beer, but they seem ok in the tasting.
Previously I'd been adding the yeast and taking the reading straight away after. Does that explain anything?

I generelly take the reading before i pitch the yeast, i also make sure that once added the spray malt or sugars that the wort is beaten within an inch of its life, then let cool down to a 20-24 degrees before i take a measurement
I have done 3 coopers and 1 cider over the past 2 weeks and each gave me a reading of between 1048 and 1060
The 1060 was to do with making an error with the spray malt, i thought i out 2 500g bags in, but turned out it was 500g light and 1kg of muntons enhancer

Good idea to take the sample/reading before adding the yeast, but it shouldn't affect your reading much, if at all.
When taking readings, ensure the wort has been evenly mixed. We've all done it, taken samples from the top of the FV when the wort hasn't been mixed thoroughly.
