Hi there
I had one can of a wherry kit left over and decided to brew it up, I had already used the kit yeast, so I substituted it with a packed od Safale S04 and some YeastVit, brewed to 11.5 litres
OG was 1042, FG was 1010 after 16 days, temp was a bit high between 22-24 C - but bottled it 19 May.
After a couple of weeks the beer had a very odd taste to it, I am pretty sure it's not infected - there is no vinegary, TCP taste to it - but it is very sweet bubblegum type flavour - not particulalrly pleasant. I am guessing this has something to do with the the S04 yeast and the higher temerpature of the fermentation - will this taste dissipate in time? - nearly 2 months in the bottle now and nothing much has changed, the flavour is still present...hoping I wont have to chuck it.
Anyone else found this to be a characteristc of the S04??

Re: Wherry + Safale S04 Yeast
With the higher temps is sounds like you have a lot of esters in there which S-04 does do.
I don't think it will improve TBH.
