Strong stout

Hi everyone.

Right I have made a few beers now all but one been a success but I'm finding i like the stout more than I like the others but now I want to increase the voltage. How do I go about this? I normaly brew to 20l and idealy don't really want to go below this im after a beer around 6% but dont want to ruin it with too much sugar. I have ordered the coopers stout and 1kg of dark spray malt.

You could try something similar to this Coopers recipe - http://www.coopers.com.au/the-brewers-g ... xtra-stout

1.1kg of DME is about the equivelant of 1.5KG of LME, so adding the 500g of dextrose to your DME should get you somewhere near :)

AG#42 - Heritage Double Ale - 10.5%

On Tap:
AG#44 - Harvest ESB - 5.4%
AG#45 - Amarillo Gold APA - 5.2%

...add 500g of brown sugar.

or if you want a nice burnt caramel taste, simmer the 500g of sugar with 250-300ml of water and a squirt of lemon juice for about 20 minutes until it goes dark brown and add that to the fermenter. (candy sugar)

Liking the sound of that. I added too much sugar on my 2nd brew it was a lager and it totally ruined it. will the same not apply with stout?

When you simmer the sugar in a small amount of water and add a citric acid such as lemon juice you invert the sucrose to create fructose and glucose, which doesn't give that home brew twang.
The darker it gets as you simmer it, the more burnt caramel /toffe apple type taste it will get.

I was thinking about this maybe a brew ferm Christmas kit and a coopers stout that could work ?

Sounds like an interesting Toucan brew.

Would be interested to know how it turned out if you give it a go.

50Cal, I don't mess with Hydrometers, so couldn't tell ye. But, I once inadvertently did my exact usual thing. Only, I left it at three gallons!

It was absolutely f**king Gorgeous ~ but it also ripped my brain out and sh!t into my empty skull too :shock:

I strongly suspect it'd take more than even 6% to do what that stuff did to me.

But, there it is. Dead simple recipe. Nothing clever needed to do it. Tried and tested and carries a govt. mental health warning.

Ah yes it be a two can so no extra fermentables so could be a good brew and for a similar price of normal 2 cand

Brewed a batch up tonight. I went for the Coopers Irish stout, never made this one, is there much difference to the original stout?

Anyhow I brewed it as per Geezah's instructions with the 500g brown sugar boiled up with a bit of lemon juice. (smells fantastic) Brewed to 20l with 1kg of dry malt.

Took a reading with the hydromiter and it's bang on 1050 so roughly 6% if all goes well. Didnt want to take it over that so i'm very happy so far now just the waiting game. tick follows tock follows tick.....

I have the new style FV without the snap lid the one with the removable ring so it never reaches the top then once its died down you just remove the ring and all is nice and clean inside.
