I've just finished bottling a Golden Stag kit and am about to start my next kit, which is a wherry and am wondering which yeast to use, I have the kit yeast obviously but also a packet of gervin ale yeast 11 g. having heard this kit can stick during fermentation i was thinking of using the gervin or even both to ensure it ferment out.
Any views appreciated
which yeast?
Re: which yeast?
I would be inclined to use the Gervin if only because it's an 11g sachet and I have used gervin to good effect many times. I would sprinkle it onto the surface of the aerated wort and leave it for about an hour or so to rehydrate then gently stir it in and next morning it should be fizzing away merrily. You shouldn't need both pack as 11g will be enough, save the yeast from the kit and use it with another 6 or 7g sachet supplied with your next kit.

Gervin is almost certainly the same strain as Nottingham, which is super convenient. Cheers!
