Fermentation above 24 c

Post by scitso213 » Tue Jun 10, 2014 9:26 am

Hi all, looking for some advice. just started my 3rd brew - simple lager kit with some coopers enhancer 2. the cupboard i used for my first 2 brews temp was perfect sitting around 18 to 22c. now that things are starting to warm up for summer my cupboard is now above 24c and can only be getting higher. the cupboard is also the only space i have to store my beer fridge and that also gives of heat witch was great to get the temp sitting around 21c.

so the question - does anyone have any tips or is the temp going to be ok and at what point should i start to take drastic measures?

from what i have read the temps it was at was perfect but i haven't read much about these temps, any help would be great.

At fermentation temperatures higher than the yeast likes (some have different temperature preferences) you will increase the risk of producing off flavours in the beer. The usual offenders are diacetyl, fusel (hot) alcohols and acetaldehyde (green apple).
Control of fermentation temperature is one of the most important aspects of production IMO.

i no longer have the instructions for the simpley lager kit to see what temps the yeast liked. i think it was 22 to 25 so still ok i think :(

How about putting the FV in a water bath, and changing the water every day or so?

It is very important, even when brewing kits or extract.
I would very much recommend investing in some kind of temperature control before thinking about spending money on shiny pots, Blichmann gear etc etc.

I stick my fv in a tub of water that is to the level of the fermenting beer and that seems to keep the temp down and stable

I've got a cupboard under the stairs I use and thankfully it will get to about 20....I really need to move my brews in there now or they will be buggered! You can get cooling blankets, just have a google for them.

The first fridge I got changed my brewing as much as the right yeast did. To be able to provide my yeast with an environment they love makes me a minor deity.

I now have 3 fridges for brewing and want another for a cheese cave. I don't have a white goods fetish, honest.

I've used a large gardeners/builders trug with water in and sat the FV in it. You bung the odd ice cube in when the water is warming!

I'm still finding my cupboard under the stairs is a good temperature for most ale yeasts. I'm not really interested in brewing lager so I'm not investing in a brew fridge.

On a similar subject I've been conditioning my bottled brews in my shed which is usually nice and cool.

I went in there today, however, and it was rather warm - will this cause me a problem?

Investing in a brew fridge isn't that expensive, especially if you can pick up a cheap one on ebay.

Mine transformed my brewing, and l hardly brew lager, so it's great for any brew, and with give a constant temperature all year round!

Do you set an upper and lower max to ensure the thing isnt on all the time?

Depends what temperature controller you use.

I'm using an ATC 800+, and it keeps within +/-1C of your set temperature.

I wouldn't really want to ferment any ale above 22C, unless it is a wheat beer or Belgian brew.

Consistant correct fermentation temperatures are the key to any decent brew.
