Brewferm Diablo Stuck?

Post by TonyT40 » Mon Jul 21, 2014 6:43 pm

Hi All

I put a Diablo in 2 weeks ago. Its been in the brew fridge at a steady 22 degrees. Came to rack into another bucket yesterday for 2 weeks at 14 degrees for secondary fermentation and checked sg. It was at 1019 (og was 1075) which comes out at 7.3% !!! I have made this kit twice before with no issues. The only difference this time was I used brew enhancer. It smells good but its still very cloudy. Should I just bottle it anyway? What do you think?

I've not done the Diablo yet, but have found that the Brewferm kits like a bit of extra time in the FV. I'd give it another week at brewing temperature or maybe raise the temperature a bit (the kit instructions say 22 to 25C so you are fermenting a little colder than recommended) and monitor the SG; if it has not moved in that time it will be OK to bottle it or you could reduce the temperature to about 18 and store it for a further couple of weeks to allow it to drop clearer before bottling it.

Happy brewing,

Ian.
