It's fine, just leave it until day 14 if you are concerned. Or you can (dare I say this?) ignore Ditch and use a hydro to see if the brew has finished (not something you need with a Ditch's Stout).

While you will get very good results from kit (probably better than some ales that you get in pubs) if you want to get excellent beers, that you may not even find in the pub, then yes, you would have to go all grain.
