I'm drinking my first pint after bottling it 4 weeks ago... Have to say I'm very pleased with the result! It kind of reminds me of Brewferms Diabolo but is nowhere near as strong. I'll get a pic posted the next time I pour one.

I got mine bottled tonight, and primed it at 7g/L.

It comes in at 7.1% ABV, and will get a couple of weeks in the warm before I move it into my garage :)

Couldn't resist and had to open a bottle of mine last night for the obvious QC purposes. Good carbonation after 3 weeks in the bottle with a decent head and lacing that lasted all the way down the pint glass. Colour was a good ruby red, clear as a bell and whilst the taste was still very, very green, it shows signs of real promise. I was definately getting a fruity almost licorice finish which I presume is the effect of the Wyeast 3711? Overall I reckon this will be something quite special with another month or two in the bottle.

Nice one, GavH, sounds good. I'm tempted to open one of mine now. It's been in the bottle eight weeks so should be coming along nicely. Still four weeks until the family party for which I brewed it though, so I need to exercise some restraint... but maybe I can spare one - for QC purposes, you understand...

I think you should widders, it's importabt to gain an understanding of how the beer develops in the bottle over time. Or something. :D

Well, the beer went down a treat at my sister's party. Didn't manage to drink all 32 bottles though - I suspect it was a fair bit stronger than the estimated 7%. Had quite an alcoholic bite to it, very dry, but also richly malty. Everyone commented on how "Belgian" it tasted. That'll be the yeast, I said.

Here's the label I knocked up using labeliser.com - would have designed something from scratch but ran out of time:

And here's what it looked like - they only had tumblers in the Center Parcs villas so I decanted the beer into large jugs and poured it from those:

I have one bottle left. Just debating whether or not to crack it open to enjoy with the World Cup final...

I'll definitely be doing this recipe again some time, I reckon.

I was beginning to think that this brew was never going to be to my liking. Up until now I've found it too dry and a bit sour, but I think that I've been sampling this brew too cold.

I fancied a 4 month old bottle tonight and popped it in the fridge for 30mins and it seems far more appealing to my taste buds. I'm still not mad on it, but it's mellowed and the abv strength isn't so hot now either.

Let's hope it gets even better by Christmas!
