Using spices in a christmas brew

Post by twentyfootwilf » Tue Sep 30, 2014 8:46 am

Does anyone have experience of using dried orange peel and corriander seeds in beer. What I need advice on is how much of each to use and does it need to be simmered or does it need just steeping and for how long. I'm intending to brew to 21 litres and will be using 2 cinnamon sticks and a little nutmeg.

Hi Wild
I'm trying the same sort of brew, the recipe I used was one nutmeg two cinamon sticks two cloves I gave them a quick boil for sanitisation and steeped for fifteen minutes, added one orange rind and half a tin of black treacle. I'm adding five hundred grams of sultanas soaked in brandy at the weekend for last five days in fv. The kit I used was Sgt Bilkos winter warmer :^o

Sounds good racinsnake!

I know nothing about adding different things to brews but gotta feel there's to many different flavours going in.

Ive used orange peel with coriander , it gives a belgian wit flavour, also used cinnamon in a stout for this time of year.

oh and its nice to see that you imps and mariners are now friends!
no palate, no patience.

Drinking - of course

I've been a mariners supporter since I was a kid, still can't bring myself to be a Lincoln fan even though I live much closer to Lincoln these days, but it's always nice to see them do well except when they play Grimsby.

Hi Wilf
Now there's a thing! I'm an imp in cod 'ed land lol. You won't hear me running the big Gy down but like you I can't bring myself to change stripes. Hope your having as much fun circulating that hill as I am down freemo?
Glad you like my idea although I have to admit there is a lot going on, the sultanas may yet end up in my next apple pie.
