Chilli beer

I'm toying with the idea of making either a cerveza or stout based chilli beer,
any tips on what are the best ways to go about it ?
was thinking it would be best to heat the wort in a saucepan and place chopped chillies in a hop bag, and throw them in for a while,
or i could add them to the FV (whole or chopped) or add one whole chilli to each bottle :shock:

i'm slightly concerned about sanitation issues though, which is why i'm thinking the saucepan route maybe my best bet.

neil,
Split your Brew. 2/3 normal, 1/3 Chilli, you might not like it!
I split a 21Lt Stout 3 ways, Chocolate, Coconut, Chilli.
I used 5 little super hot chillies chopped up, boiled in 1Lt water then simmerred for 10mins.
Strain the juice into one of your 3 FVs, brew as you normally would. My Chilli Stout was Hot, Hot, Hot, so you might want to
rein in the amount of Chillies! Up to you how Hot you want it! :D
Everyone liked it though, surprisingly!

what chilli's did u use out of interest, i was thinking of using bird eye, but they are on a par with scotch bonnet (or near as damn it).

I made a chilli ginger turbo cider a few years back using 1/2 tsp of birds eye chillies simmered and a grated ginger root in 1l of apple juice and it certainly added kick !

Lot less mess with those too - just use dried ones.

Bird eyes might be a bit much, I'd better the larger ones that are same shape and make sure you take the seeds out
A bit of lime zest will take the edge off too.

I wonder if you could use those frozen chilli cubes you can get in the supermarket...they come in a tray and you just pop out as much as you want. No dicking about with chopping and deseeding and all that bollocks that way!

I brewed a stout with one of the brewers at Imperial Brewery.

We added two sliced scotch bonnets when the boiling had stopped, to strelizie them, then added them to the FV like a dry hop addition. This was for two 9s by the way ,)
