Well firstly sorry for the late reply! I was in Truro yesterday as the footy team I support were playing away and it was a good excuse for a day trip and a few beers... we lost but thats another story...
My Brew night went well (I hope) I steaped 40g of elderflowers in 1lt of boiling water in the cafetier for 1 1/2h as suggested which worked really well so thanks again for the tip. Made up my Wort with a mix of mineral waters to try to get the right calcium carbonate level (probably mucked it up completely but its good to experement and it can't be any worse that the tap water around here!).
When I tasted the elderflower "tea?!?!?" (for lack of a better word) it was surprisingly dry So I figured I'd add in a little extra sugar.
The Over all recipe was:
Woodfordes great eastern kit
40g elderflowers steaped for 1 1/2h in 1 lt of boiling water
50g brown suger (boiled in to water)
100g Light spray malt (disolved into hot water)
Then made up to 22lt
OG was around 1043@26C
Left it to cool a bit then aerated and pitched in the kit yeast (I have a safeale 05 in the fridge just incase).
Its started bubbling out of the airlock today (well saw it at 4am when I got back from truro!) and it smells really nice has a good hint of a floral odour really looking forward to seeing what it turns out like! But it has all the makinngs of a nice summer brew, although it could still all go pear shaped yet!
Tried my Wherry today after only 1 weeks conditioning (I know its too soon but first brew couldn't wait) Its a really decent pint already. Almost completely clear really good amount of ale fizz and a nice head that stays to the bottom of the glass and despite too much water a decent amount of flavour! Well pleased can't wait until its fully matured! I'm utterly hooked on home brewing after tasting it!
