I agree, just throw the hops in. Hops have been used for centuries as a preservative and antiseptic. That's why they are used in beer. The taste is simply a bonus.

Well,.... Considering all the cock ups, this is turning out to be an excellent lager! Its fermented out to an FG of 1006 which puts it at 6.2%abv and despite all the (accidentally added) sugar, there's no nasty cider tastes what so ever! My only criticism of it so far is that due to massively fluctuating fermenting temps, its perhaps not as clean and crisp as I'd like but hey ho! Its now gone out to lager in the garage with a handful of saaz chucked in the top!
