hi dye. I brew bitter. i generally put 80g of sugar in a clean saucepan, add a cup or two of water and boil it for a few minutes. i then pour it into my secondary fermentation bin and allow it to cool. i then siphon my brew from my main bin into the second one, making sure that i hold the end of my siphon against the inside of the secondary bin to avoid splashing which would introduce oxygen into the brew (bad). I then bottle away. stick the bottles in a warm place for a few days, then somewhere cool and dark for as long as i can bear. (usually not long enough)
