The DVD that comes with the Coopers Starter kits states it's best to ferment the beer at 21 to 25 mark. I suppose this is for their English Bitter or Australian lager kits that actually come with the starter kits as these use Coopers ale yeast. I would expect the Coopers kits that use lager yeasts would need fermenting at lower temps. I frequently ferment my beers at 24c and very occasionally higher if it gets really hot and I haven't had a problem. I have to say my preferred temp for ales would be 20 to 22, but I can't control the temp in my kitchen.

I have had banana with the APA yeast before, i was doing a small extract brew and i think i let it get to about 24c (maybe more) the end beer tasted like a fruit smoothie, it was peculiar but also quite enjoyable; i like banana.

Saison yeast love the warm weather.

If if cools down you just find a warm spot for the ferm vessel.

As expected loads of great suggestions and answers to this post...here's what I was looking to do next for a quick brew..
Youngs definitive lager made up with 1 jar of H&B malt extract and 2 tins of t&l golden syrup and hopefully add some saaz hops which I have on order..prob going to use kit yeast or maybe a coopers apa yeast as I'm looking to do geezers waggle dance recipe so I'll be using a s04 for that..any advice!?

I'm pretty sure Coopers yeast will ferment between 18 and 32, but ideally 21 for taste.

I've brewed a few at 24+ and never noticed any negative flavours at all, I wouldn't worry about it (not much you can do about it anyway tbh).

S-04 and US-05 are both rated upto 24'c. I just ran an S-04 at 23'c for two weeks and there is no ester flavour. less than i was expecting/wanting in fact.

I think if you have to brew highish temp the important thing is to be able to run two weeks without letting the temperature drop so a full fermentation with a good conditioning phase takes place.
I split my last batch between two fv's.
One was pitched with US-05 and the other S-04.
The room temperature peaked at about 21 but dipped alot at night
The S-04 went off as it does and climed streight upto 23'c. I used a fish tank heater in a water bath to hold it at 23 for the full two weeks.
The US-05 went off slow and steady as it does and never climbed over 21' so I just heald it at 21 for two weeks. I havn't tried it yet but it smells just fine.

The water bath buffers the peaks and the dips in temp. I think it's a cheap, ideal way of brewing ales in the UK.
