Conditioning time

I've recently bottled my first brew, Woodfordes Wherry. The instructions state that after bottling the bottles should be kept in a warm place for a couple of days, then moved somewhere cool for a further 14 days, at which point they'll be ready. However, what exactly is 'cool'? I have my bottles in the garage, but with no means of controlling the temperature. I check on a daily basis and the temp is usually between 15 - 18 degrees. Is this okay? Further, in other sites etc that I've read (including here) the recommendation seems to be to let the conditioning run for longer than the stated 14-odd days, anything up to 6 weeks. Can those who have been at this for a while enlighten me with your experiences of temperature and conditioning time? I'd be most interested.

After bottling I keep mine warm for 5 days or a week before storing somewhere cool.

Your garage sounds fine but, as it's not really cool, it just means the beer will take slightly longer to condition. I'd give them a week for every % of alcohol. So if the beer is 4% ABV, I'd give it at least 4 weeks. That's if you can keep your hands off it that long :wink:

I've been brewing wheery for a while now as it apeals very much to my tastes :D , usually make only 20 liters, after fermenting for 2 weeks, i usually bottle, then keep in a warm place for a week and leave in my gargae for about 4 weeks ( minus the odd little tipple in between :oops: ) find it taste best after the four weeks in the garage.

warm place and cool place are generic terms warm 18-24 cool is ale serving temp ~13c, you can go cooler but in summer it is hard to get anywhere near these as it is warmer so you will have to buy a chest freezer are make a kegerator! you know you want to

I personally think sunday lunchtime drinking should be banned

I bottled my Wherry 5 August 08, and last night temptation was to much and I cracked open the first one, 'just to see' you understand! As this was my first ever effort I was pleased with the results. Good carbonation, good head which lasted to the end with some clinging to the glass, and good taste. My only slight disappointment was that it wasn't as crystal clear as I would have liked. As this doesn't seem to have effected anything else I'm not that bothered, and hopefully this will improve with the other bottles as they'll have longer conditioning time. We'll see!
