Secondary Fermentation

Ive recently read there are some benefits to secondary fermentation. Is there a benefit to my decanting from my FV after a week into another FV for another week or two. I read wort sitting on the degrading yeast (autolysis) can impart “yeast bite” tastes. Sounds believable and looks like an opportune moment for me to dry hop (in muslin bag this time)> Should I add my gelatin at this stage too?

In reality I’m just looking to get more involved with my beer and improve where I can.
