Brewferm Abdij Yeast

Scored one of these cheap from ebay and was thinking of boiling up some sugar with a pinch of citric acid for myt patented Dark caramel sugar thang and using the yeast from a Chimay white. anyone else replaced the yeast in this kit for the real stuff?
