Customising a 2 can kit

Post by Beer Belly » Tue Feb 16, 2010 11:49 pm

I've got a MUNTONS GOLD HIGHLAND HEAVY 2 can kit and I was thinking of adding 500g Dark Spray Malt and 500g of Pale Spray Malt and maybe 250g brewers sugar, I want to get a strong beer around the 9 - 10% mark. Will this be achieved adding the extra malt? Im using Nottingham Ale Yeast.

it'll probably add the alcohol you want, but it'll also make it taste quite sweet as you aren't adding any more bitterness to balance. Scottish ales like 80/- are quite sweet and malty, I haven't done this kit but it could be similar before you start adding extra fermentables.

I suppose the Nottingham yeast might give a bit more of a dry taste.

It says on the danstar website that "Nottingham is a great choice for creation of higher-alcohol specialty beers"

However 2 can kits do get stuck fermentations now and then. Even allowing for this you should still achieve a high ABV. I think that what you have planned will achieve a high alcohol beverage though it may not taste great, to much alcohol without enough body. Give it a whirl and see, what can you lose?

Will the spray dry malt not add body?

If you're using that quantity of fermentables you might want to pitch more than one packet of yeast. You could always do a hop boil to add bitterness.

It will add a bit, but I don't think enough for a high alcohol beer. This is purely speculative though.

Just a thought, you could use windsor yeast instead. This will leave a bit more flavour as it doesn't ferment all the malt. Problem with this is that you wouldn't get all ABV you want....

right, thanks for the input folks. I'm going to boil up some hops and chuck it in with the rest and see what happens.
