Coopers Stout

Ditch's Style. Its been in since Tuesday unopened. It frothed up to the lid but not out of the air lock as some say it does. I just opened it today and it smelt a little strange. I dont know if it is anything untoward. It looks healthy with the colour and the yeast. But the smell just smells out of place. Any ideas?

my nut brown ale was like that, that is why i'm off to the LHBS with a bottle 2morra to get an educated guess as to what went wrong (if it has) as there is a very pronounced off taste (homebrew twang) to the beer at the beginning, after which it tastes like hobgoblin.

cheshire31 sulphury smells are normal during fermentation, it should pass, sure it'll be fine.

bevvy, what added fermentable did you use for your BR Nut Brown?

I used Beer Kit Enhancer as opposed to spray malt as I didn't want it to be too thick (Newkie is quite a thin drink anyway), but didn't want to use 1kg of sugar as I wanted to avoid twang. After reading Blackbags recommendation on the closest brew to Newkie Brown this seemed to be the best course of action and after only two weeks in the bottle I've got a bright and wonderfully crisp refreshing brew. It's just a shade sweeter than Newkie but apart from that, this is just what I was after.

My 2 month old Wherry is delicous. I have been drinking it tonight :).

i'm afraid that i'm far to used to commercial beer and was nieve to think that i could replicate that for my first brew :oops:
