estery taste?

Post by mst3k » Tue May 15, 2007 12:01 pm

Hi there,

Iam going to brew a Coopers Mexican Cerveza with Muntons Beer Enhancer.

Iam also thinking of using 2 x SafLager S-23 Yeast's. But, in the notes it said it leaves a "fruity, estery note"

Would this be a problem to a Cerveza's clear, crisp taste?

Or

Do you know of a lager yeast that leaves no taste?

What is a "estery note" any way? good or bad?

Going to be brewed at between 12-15* C

Thanks

Nice 1 Daab,

Would Safale US56 be a clean tasteing yeast at any temp between 15-24*C?

Or would I have to keep the temp down to keep the taste down?

Thanks

I've used US-56 (or US-05 as it's now called) on a couple of ales. It's very clean. Some find it a bit slow to clear but I've not had any problems.

WOW!! Just found the perfect yeast I need from white labs!!

WLP940 Mexican Lager Yeast
From Mexico City, this yeast produces clean lager beer, with a crisp finish. Good for Mexican style light lagers, as well as dark lagers.

Attenuation: 70-78%
Flocculation: Medium
Optimum Fermentation Temperature: 50-55°F
Alcohol Tolerance: Medium
But it's only available March/April also I can't even find it on any UK HB suppliers sites

O well, maybe next year!!

It's a special order so you'll need to let the Hop and Grape know in advance you want it. As you say, I think you missed it for this year.

Just had an Email reply from Patsy @ Hop and Grape.co.uk saying:

Got some on order now, NICE!!!

Thanks

Yeah it's always worth giving H&G an email even if it's a limited yeast, i've had the seasonal yeasts out of season sometimes.

By the way, a slightly fruity effect in a lager isn't always a bad thing - Pilsner Urquell's a bit like that!
