out of date kits

out of date kits

hi got five coopers kits today two cervezas and three coopers lagers .the two cervezas and one of the lagers are out of date, which i know from previos threads is not an issue except for the yeast.my question is what yeast would anybody reccomend as a replacement?any ideas would be much appreciated thanks stuart

I always use Saflager W34/70 for all my lagers, tried comparisons between W34/70 and S23 and easily prefer W34/70, its a much "cleaner" taste.

is the saflager yeast a proper lager yeast?the reason i ask is i've always brewed the coopers lager using the yeast supplied at the same temps as my ales no lagering .until i get my brewfridge up and running i dont know if i can get the right temps for a proper lager yeast

If you want a clean ale yeast that flocs well then you should try Nottingham.
It ferments well and nice and dry especially at cooler roomtemp like16-18C
It is also widely available from your local has...

will this give similar results to the yeast supplied with the coopers lager kits? i know that its not stictly speaking a lager yeast but as yet i've had no complaints. also is it the danstar nottingham yeast you are talking about?have you ever tried the mauribrew yeast is it any good ?if so which one?sorry for all the questions but this is the first time i've had to go and get seperate yeast i never knew there was so many!!

yep they are lager yeasts and Coopers european lager is also supplied with a lager yeast.
my method of brewing lager is to start off brewing at about 16*c for 24hrs to let it get going then drop the temp to 11*C until the specific gravity is around 6 points from where i expect it to finish then bring the temp back up to 16*c to allow for diecetyl rest. Not sure if this is the accepted way but it works for me !.

Yes the dans tar Nottingham yeast. It should give similar results to the coopers yeast, maybe a little clear if the temperature is right... It sticks to the bottom of the bottle like sick to a scarf!
I have not tried the mauri brew yeast (ale), but I hear though it can ferment clean at higher temps...
Maybe some one else has used it?
