Just ordered my usual half dozen beer kits online and chucked this in.

I made this just before Christmas last year. According to my notes I made it with 1kg of DME and I used Muntons gold yeast and Made it to 21 litres. The reason I changed the yeast was because the yeast that comes with this kit is a mix of ale and lager yeast and I wanted to use just ale yeast. Unfortunately I didn't make any note of what I thought to it and my recollection is somewhat vague, but I don't think I was overly impressed. If I was to do it again I think I would stick to the kit yeast and steep some grains just to give it a bit more fresh grain character. Some Cascade finishing hops should go well with this one too. I hope that's of some use to you, I can only apologise for my lack of memory #-o , I shall have to start making tasting notes :wink:

i've had this as well, i'd agree with twentyfootwilf as well. it is a nice kit but lacks any real bite on the finish. some steeped grains and some hops boiled will make for a smooth drink.

I brewed this kit to half of the Coopers Strong Ale #2 recipe and adding some dry hops and a couple of months on it has turned into a nice hoppy, well bittered and malty ale that reminds me of American style IPA's, hence why I called mine Crafty IPA :D

I've just ordered a Coopers original series draught which I imagine is probably similar to the Thomas Cooper selection traditional draught and I intend doing it with 1.5kg coopers light malt extract, 300g aromatic malt steeped for about 30 to 40 mins, 20g sonnet hops boiled for 20 mins, 20g sonnet hops boiled 5mins, 20g willamette hops steeped 5 mins then added to the fermenter prior to pitching the yeast. The intention is to hopefully get a malty pale ale with a floral slightly fruity aroma. This is a purely speculative attempt somewhat trial and error (hopefully not so much of the error :wink: )

I'm planning on doing it as an ale ie in the keg and hopping it up a bit.Any hop suggestions.

See my last reply re the Sonnet and Willamette which are floral and blackberry aroma respctively. If you want a more English style ale you can't go wrong with East Kent Goldings or fuggles, both are traditional English ale hops and very pleasant flavour and aroma wise.
