Well not sure if this is the proper place for this but here goes .
I am a big Honey brown fan my self . I have read posts that claim adding the honey at end of boil will do no good for flavor because the yeast will convert it all to Alcohol and lose the flavor and others say this is not true . Well I have done it a couple times but that is not important for this . What I propose is a test of the honey taste after fermentation . So i want opinions . ..
How about if I was to mix some good honey in a quart or so of water and then add in a bit of ale yeast . Allow it to ferment the honey just like with wort and then give it a taste to see if the flavor is strong or weak .
So I guess the question is How much honey to water ratio ? How much yeast ? Do you think this would be a good test ?

I've found that the scent more than the taste of the honey has lingered post fermentation, both in my own and in commercial brews. YMMV

yes . I used 2 pounds of cheap dollar general honey one time and it had no flavor left over . I have higher hopes for my NB honey brown as the honey was very flavorful indeed.
I think bottling with honey would help in the flavor . I still plan on fermenting some good honey to see what happens . I just have to find some honey worthy of the time and money . Tried some expensive stuff the other day but it tasted not much different than the average stuff.

Using honey will give nice flavour for a few weeks after keg/bottling, but it soon loses the flavour.
It was suggested that the use of Gambrinus Honey Matl used as you would a cyrstal / biscuit malt will add the honey flavour, but there are not many places that stock it.

thanks for that word . The next time I buy some honey barley I will see if I can find that instead. I use a lot of honey barley but I never noticed any real honey taste from it .
