first cider brew

Hi All

i was in my local homebrew shop on saturday, i bought two lager kits and a cider kit that caught my eye hoping to drink it later this summer, if we get one! :D

i usually use a white labs yeast for my brewing so can anyone recommend a yeast to use for the cider as i've never brewed one before, also would you lager a cider for a month or so like a lager?

For a kit cider I'd follow the instructions and use the yeast that came with it.
For TurboCider I generally use Young's cider yeast but have had good results with various wine yeasts (many people use a champagne yeast) and even Munton's Gold ale yeast. The people who lay the cider down for a malolactic fermentation often culture up the yeast from a bottle of Old Rosie - it's known to carry the lactobacillus

After fermenting a TC, I give it a standard ale conditioning period - 2 weeks warm to produce the CO2, 2 weeks cold to get it into the liquid. And then as long as poss for the taste to improve.

cheers oldbloke,

i was looking at the champagne yeast on the whitelabs site. i think i might try that, the kit i have makes 30 pts do you think it would be ok to add apple juice to make it up to 40? this fills my keg. or should i be looking to add other sugars?

Apple juice has enough sugar for 5.5 to 6.5% depending which you use. No need for more sugar.
