re: yeast, with Brupaks use the yeast that come with the kit. Other kits put the yeasts to one side and either use them as yeast nutrient(put the yeast in boiling water for 10 mins, cool and use for rehydrating your yeast for a brew). Or use them on TC or other similar brews.

I agree with your point there on Brupaks kits, they're tip top.
Don't rule out all "own brand" yeasts, the Coopers yeast I used in their IPA did a bang up job, it isn't the most flocculant (if that's a word) yeast but it did the job and didn't give the brew any menacing yeasty overtones.
