Raspberry Stout

I've been planning to brew a stout, to Ditch's method of course, but after reading the article linked on Widdersbel's Blackberry Wheat Beer thread viewtopic.php?f=4&t=65368 I think I'm going to add Raspberries for a secondary fermentation.

Anyone have any thoughts on pros and cons?

Being a stout you'll need more raspberries than in a lighter beer like a wheat.
I'm just here for the beer.

try to picture what it will taste like.

wheat beer is nice and sweet and full bodied, ripe blackberry's are a nice sweet addition with a very slight citric undercurrent to contrast the sweetness.

Stout is roasty and dry, picture that combined with the harsh acetic mouth puckering raspberry dryness. Does it sound like a match made in heaven?

You will make exactly the opposite of what is most appealing to you, for years people added lactose to dry stout to contrast and compliment the dry roast impression, if you are determined to use a stout as a base try a different fruit with a heavy sweetness, Date, Plums or Cherry. Your beer will thank you for it.

Or better still try 5 different fruits and make your own mind up.

I popped a bottle while watching the World Cup opener... Only been in the bottle two weeks and I think it needs a bit longer tbh. The cherry flavour is quite subtle but I found as I got further down the glass it started to taste quite dry. I still liked it and, as always, it can only improve with age but so far I'd give it the thumbs up!

So I've given the Stout an extra couple of weeks in the fridge... it is now officially an absolutely superb pint!

What volume did you Brew to? How much did you Batch Prime?
I`ve got 18Lts of this Brew waiting for bottling next Sunday.

Sorry for the late reply Wales, been on hols for the last week. I made it exactly to Ditch's spec but after 4 days in primary I racked it on to 1.2kg of cherries and left it there for 10 days. I didn't take a note of how much priming sugar I used but pretty sure it was 90g of plain cane sugar.

Thanks for the reply.
Had a sample jar taste of mine last night, I made mine with one bottle of Polish Cherry Syrup, can`t taste the Cherry at all!
Going to add another bottle of Cherry Syrup when I decant into 2nd FV and bottle tomorrow. Might not add any extra sugar to prime because there is
65Gr sugar in the Syrup.
Did yours taste sweet after adding 90Gr sugar, or is it `Just Right`?

If it's any help I got frozen cherries from the local Sainsbury's and used them (defrosted first!). I don't think it tastes sweet, pretty much just right. I've given a few bottles away and it's had a thumbs up from everyone who's tried it.

lol, I'm the only beer drinker in the house so I tend to plan my brewing around bottle availability! I have a nasty habit of setting aside a quarter of the bottles when I make a Brewferm kit as they age fantastically, which usually means I can only have 2 brews in the bottles before I run out of space.

Get more bottles, fill them with your Brews, put them in the back garden, cover with tarpaulin! Job done! :D :D :D :D :D :D :D

Hello Caddarn,
Just looked at your post `Raspberry Stout` but you made Cherry Stout!
Anyway, Bottled my Cherry Stout today, had to put in the second bottle of Cherry Syrup because there was just no taste at all with one bottle.
So, into the 2nd FV goes the Cherry Syrup, all mixing good and proper, all put into bottles, half pint left over, drink, taste, enjoy,
Wow! This has got a big Cherry thing going on here! It`Bloody Lovely Mun! :D :D
