Well my first brew didn't exactly spring to life and I've never seen the airlock actually bubble but it must have been doing something as the level has always shown to have more pressure inside the bucket than out. Last 24 hours though the level doesn't seem to have moved much - if at all.

Been in since 1st September so took a sample tonight and from the OG of 1040 have a current reading of 1016 which I calculate to be around 3.1% - not really what I'm after.

Smells very 'malty' and when tasted there is a slight sparkle to it.

I'll check over the next 2 days but my question is, after 12 days is that it and just take it as is it or can I add brewing sugar to try and re-activate it to try and get a higher alcohol content - if so, how much to a 40 pint kit - brewed to 36 pints initially?

It's still fermenting but it's slowed down. Wherry is notorious for being sluggish towards the end and sometimes getting stuck. If you're patient and give it another week, the gravity will drop further. You can speed it up by moving to a slightly warmer place and by rousing the yeast - gently stir with a large sterilised spoon to lift the yeast back into suspension (without splashing).

Don't add brewing sugar - it will end up unbalanced. Remember that priming sugar will raise the alcohol level a bit too.

Thanks for the reply. I didn't want to mess with it to be honest so am happy to do as you suggest and leave for another week - can't come to any harm although it pushes tasting time back a bit further!

In the warmest spot I have but will give it a gentle stir tomorrow.
