Coopers IPA suggestions please

Suggestion please from those familiar with Coopers IPA kits. I've got one on it's way to me and I have an idea of how I will brew it. I have 3 x 340g jars Rayners malt extract (total 1020g), 1lb jar honey and demerara sugar. I also have 12g Willamette hops and 20g cascade. I was thinking that in order to keep it somewhere close to Coopers recommendations for this kit I could use the 3 jars (1020g) of malt extract (Coopers recommend 500g dme) and 250g demerara sugar (Coopers recommmend 300g dex) I think this should be about the same amount of total fermentables as Coopers recommend. I also thought of boiling the 12 g of willamette with some wort for 10 mins and dry hopping with the 20g of Cascade and brewing to 23 litres. I could leave out the demerara and use honey and malt extract in some combination of quantities instead but not sure if honey is a good addition to IPA. Any ideas? #-o

I've brewed the IPA twice, once with a 20g Styrian Golding hop tea + 40g Cascade dry hop with the suggested fermentables to 23L and it was very harsh, so I binned half a keg of it.

The 2nd brew was similar to the Coopers Kilted IPA recipe with Fuggles, and that was really nice, so I'm thinking my first IPA was over hopped for an already bitter kit.

I think that your suggested fermentables and hop combo sound nice. It won't be a super hoppy IPA, but should be a nice crisp ale.

If I ever brewed one again, I would Brew the Coopers Authentic IPA recipe with a nice fruity dry hop.

Thanks for that, I may just dry hop all the hops instead of doing a short boil given that the kit is welll bittered. Maybe just extra hop aroma would be fine. I'm looking forward to trying it, I've been intending to do one for some time as all the youtube videos seem pretty favourable.

Did my IPA in the end as follows; 3 x 340g jars Rayners malt extract total 1020g and 454g honey. I made a hop tea by boiling 12g Willamette for 10 mins and 20g cascade for 5 mins. Brew length 23 litres and used the kit yeast. OG 1042 I'm expecting an abv of around 4.8 to 5%. We shall see whar we shall see! [-o<
