HELP!

Post by Meatymc » Thu Sep 18, 2014 6:10 pm

1st brew (Wherry) went in on the 1st - OG 1040. Did a hydrometer test on the 12th and reading 1016. Gave it a gentle stir to try and liven it up and left it expecting to bottle this weekend. Just done another reading and coming in at only 1014 or slightly under. Never bubbled as such in the bin but levels in the airlock always uneven with obviously more pressure inside. Uneven tonight as usual. Getting on for 3 weeks now so worried about leaving it too much longer. Do I just accept it at around 3.5% or keep the faith it may yet improve?

Get it in the keg / bottles.
1014 is not a problematic gravity reading. (ie you shouldn't get bottle bombs if you prime correctly)

Before you bottle it, ensure that gravity reading is the same three days running!

Don't worry about the three weeks. Loads of brewers have had odd brews take that length of time to ferment out. The Wherry/supplied yeast is notoriously slow and even sticks fairly regularly. You did the right thing by stirring, and you'll be doing the right thing to ensure the gravity is stable, fermentation stopped.

One other thing about Wherry - it's slow to condition too. 3 months before mine was at its best!!! Worth the wait though.
