Muntons Imperial Stout FG question

Haven't done a brew in a while...seems to be a yearly thing with me these days :) anyway,I put on a Muntons Gold Imperial Stout 2 weeks ago.OG was 1044 and last night I bottled at 1018 (know I should have checked the FG over a few days but I thought 2 weeks was plenty after the volcano at the start).Was half way through then realised that didn't sound right.Checked the instructions and it states to bottle when FG is below 1014 for 3 days or more.I'd started so I finished...each with a Coopers sugar drop.

Thinking I'll end up with a weak (3.3-3.5%) sweet stout...that's if the bottles don't explode...and on that point,should I open the bottles to release some gas after a while if it's looking like they're heading that way?Should I pour everything back into the FV and add a new yeast?Any advice appreciated.

Think I know why I only brew now and again...always seem to get something wrong...ohh,and I hate bottling.
