Rhubarb wine
Hi all. Lookin for a bit of advice. I made 20ltr of rhubarb wine on the 8th may but i misread how much sugar and dumped in 7 kg sugar. I think i thought i was doing something else. Anyway when i used the hydrometer it was of the scale. Checked it today 1.040. Do you think it will make it and if not what do i do

How high does your hydrometer go?
If you added no other sugar in the way of fruit, you're looking at something in the 18/19% ABV range if it makes it down to single digits.
You could try dosing it with some extra nutrients and some Lalvin EC-1118, which is tolerant up to about 18%.
Either that or use it as a dessert wine...

id say you will need to put a yeast in with a higher alcohol tolerance than regular wine yeast as above

I used 2 gervin hi alcohol yeast and its still going so if it stops can i restart it and how

That yeast should go up to 21% ABV given plenty of nutrients. I doubt anything other yeast would do any better. Have you dosed the must with any nutrient? How much? All at once or in stages?BigT57 wrote:I used 2 gervin hi alcohol yeast and its still going so if it stops can i restart it and how
If you lobbed the nutrient all in at the start, it may benefit from another dose to get it to the finish line. I would address the stuck fermentation when/if it happens.
