It depends on the apple variety(ies) used and what the growing season was like. If by ‘plain apple juice’ you mean a ‘standardised’ shop-bought juice, I’d guess about 1.045, give or take a few points, depending where you are. More in the US and less in Europe generally, I suspect

Tesco's apple juice from concentrate claims a sugar content of 111g/litre. Which would give a SG of about 1.042.

Probably higher as I'm going to add about five pounds of apples once primary fermentation is done.

Caution! You risk increasing volume rather than gravity here, by adding more apple juice later. If your aim is to arrive at a respectable cider gravity, add sugar

I'm going to be adding some apples, not more juice.

What, whole apples? How might they increase the gravity?

With the sugar in the finely cut up and mashed apples; probably won't be a lot.

I added the apple pieces two days ago when the F G was 1.001. The fermentation kicked up a bit Wednesday night and yesterday morning.

Rookie,
Don`t leave the apple pieces in too long because they float to the top and attract lots of horrible things. :D

Apples are typically >80% water. To increase gravity noticeably you'd need to add an apple variety with much higher sugar content than those used to produce the juice you used initially.
