When to transfer out of a demi?

Hi,

I have had a Mead in a demi since December 27th 2014. Should I rack into another demi or bottle? I plan to not touch it until Xmas.

You should rack it off the trub at least once . I would age it for another few months in bulk to make sure it has fully stopped . Then bottle .

With any brew, if fermentation is done (or very nearly so), leaving it on the trub/lees runs the risk of the yeast autolysing (eating dead yeast coz it can't find sugar). That can give off flavours, so you don't want to leave a brew on the trub/lees once fermentation is done. Rack it. Further solids will drop out so you may want to rack again before bottling, or just be careful when you do.

Thanks. I wasn't really sure how long to leave it. I followed Joe's Ancient Orange Mead recipe. All fruit dropped out long ago.

Will rack off this weekend.
