Scottish 80/- Recipe required.

Hello,

Does anyone have a 'good' 80 shilling recipe, and is it based on a commercial beer? I've got a scottish friend who I'm looking to cater for. He says he likes 80/-. They are youngish so contemporary suggestions especially welcome. I had a look through Norman's Real Ale Almanac thread but I couldn't tell from the names really, and am pretty unfamiliar with this style.

It's really Graham Wheeler's recipe tweaked a little bit :wink:

Makes a delicious 80/-. Boiling the hell out of the first runnings is nice trick.

Wheelers Borve Ale & Belhaven 80 Shilling are also good ones if you need the recipes give us a shout

Belhaven 80/- 1041.5 23 Litres
Pale malt 3.900g (86%)
Crystal 115g (2.5%)
Black malt 65g (1.5%)
Maltose Syrup 450g (10%)

Hops 28 EBU
B.C.Bramlings 23g (start boil)
Fuggles 31g(start boil)
Goldings 12g(last 15 min)
I use Flaked Maize instead of Maltose Syrup as it's easier to get but also gives a better flavour anyway

This caramelisation business. Do I collect the first galloon of runnings in a pan to boil down by half whilst the remainder is boiling as usual and then just tip the concentrated wort into the boiler? Sound like a plan to me.

Yeah, do it however you want. You'll get the most amazing smell filling the kitchen :D

No need to stop at reducing it by half, boil it until it's scary :)
