Two packets of S-23 and you'll be fine. Reydrate, then apply to half a pint of boiled chilled wort so you know it's going to take off.

How are you going to keep it cool? I'd recommend a day or two at room temp (for the yeast to really get going) then get it down to 10C or lower if you can, and leave it there for a couple of months. You may need to re-pitch some yeast when bottling, otherwise it'll be flat - or gas it up in a cornie if you have them.

I would add CRS and Gypsum, although some lager brewing areas have low calcium levels in their water, calcium still helps with all the usual reactions and aids yeast precipitation.
Hi Chris,
Until I get my second temp controlled fridge for fermenting sorted I was going to ferment on the top end of their recommended temp range...19c
Will I get away with using 1pkt at this temp range, is this to high??

Very expensive to throw 2 pkts in.

Hi,
Stank whilst ferfenting (rotten eggs), tastes and smells O.K now but it's being a ba5tard to clear, been in corny 4 weeks now and still got a slight haze! Maybe I pushed the yeast to much??? I packet for 6 gallon! :?

A tight Yorkshireman will not throw 2 packets of yeast @ £2.50+ into 6 gallons! #-o Would anyone?????

There's no visible bubbling but it smells of Co2... gonna gie it 2wks in there then rack it, drop it to 3 Deg and give it 3-4 weeks lagering then move to bottles.

Will keep you posted
