Below is a direct rip off my "Suedehead Pale Ale 2" brewday post:
Well its crystal in the bottles, but still a slight yeast haze in the corny. But tastes far better than when it was very green.
It now tastes good. Like like tutti fruiti, although not as sweet. The smell is faint but lovely. I think I am going to dry hop this with 15g of Stryians and 15g of Pilgrim. Hopefully it will add to the percieved sweetness.
If I did this one again I think I would add maybe 100g of caramalt or 50g of crystal just to add a little to the sweetness. Add 20g more to the late hopping and drop the FWH to around 10g.
...........
Matt: I would brew this again, obviously making the changes above, and maybe using SO4 rather than notts. Have a feeling that this brew is going to get drier and thinner, I think SO4 might prevent this slightly.
I would definitely increase the late hops. As now I know it won't ruin the brew if you can taste it!
I would agree with an earlier statement. A very underrated hop.

Re: Pilgrim hop
Excellent, thanks for the info SO.
Your observations would, roughly, make a stronger version of what I brewed (mine had caramalt and S04), which is where I was headed too (my current batch is more of a session ale), so it seems our paths have converged very quickly
I've been drinking mine all week and my observations, akin to yours, are that this hop gives results that are a cross between Challenger and First Gold.
Look forward to brewing another batch, and I hope others might give this hop a go, its well worth it.
Matt

Re: Pilgrim hop
Dry hopped my original recipe with 15g of stryians.... absolutely fantastic. I would advise brewing it. Check out the brewday thread for full details....
And I think I would stick with 100% pale.... its all hops!

Re: Pilgrim hop
Well its all gone bar one bottle. But in my opinion Pilgrim are a sweet tutti fruit type taste and smell. Very similar to the "fruit salad" sweets.
Re: Pilgrim hop
Just bottled this. Used simple one's recipe as I didn't have the other grains in Matt's recipe. Didn't hit hit Simple One's OG, I was at 1.044. The hydrometer samples were very nice, but way way to bitter for my taste, but on bottling it, it was lovely. Yeah, I was getting marmalade and tutti frutti sweets, too.
It came out way darker than I was expecting seeing as I used only pale malt, it's actually a gorgeous warm amber colour. Can't wait for this to be ready. Thanks guys for your pioneering work with this hop.
