A weird one...

Did this a month ago and I was about to post a damning thread until all of a sudden......

5.8Kg Pearl Pael Ale Malt
500g Torrified Wheat

90min mash

Progress 6% 56g for 90 mins

Saaz 3.3% 50g (ish)for 30 mins
Progress 6% 16g for 30 mins

Nottingham Yeast
Blah Blah Blah


Now I was going to slate this for the Saaz as it had the most incredible earth taste and should only be in a pilsner.....HOWEVER

I have just had a bottle after it has been conditioning for about a month and the earthyness has died away leaving an amazingly clear very very pale ale.

Roll on summer, now lets see if it last that long!

I made a simalar beer using 100% Cascade I had bought by mistake. At first it wasnt that nice but has matured into a very nice beer.

I too have found on many occasions that a homebrew that one is initially disappointed by will evolve into a much better beer given time. So drink the ones that are drinking well at the time and save the others for later - they might benefit by the extra time.
