Cheers, my last 2 brews have ended up 10 gravity points under what they should have been, so making this a bit stronger so that if that happens I still have something of reasonable strength! Fingers crossed it'l be fine though!

I want more dry hops too! but I dont have enough Centenniel. I'm thinking about sticking something else in the dry hop too, maybe some more chinook, but at the same time I wanna get a feel for the flavour and aroma of Centenniel..hmm, decisions!

Even though this has 100grams of Centenniel chucked in from 10mins to the end of the brew onwards its still not hoppy enough! No where near! None of my hoppy beers turn out hoppy enough, so next time I am just going to go crazy. I dont do anything to my water other than add a campden tablet, am I right in thinking a teaspoon of gypsum added to the boil will enhance hopiness?

I wasn't particularly impressed with 2008 Centennial, the hops themselves weren't particularly aromatic. Try some 2009 cascade, 2009 columbus, or any of the NZ hops. TBH gypsum only really adds a crispness to the bitterness, it won't radically alter the beer by any stretch. Also Amarillo is consistently good.

Cheers, my next IPA I am just going to have to go crazy on late and dry hops, and if that doesnt give me that characteristic US PA/IPA/DIPA hop hit then I'll just have to cry!

Definately check out the '09 Columbus from 'The Homebrew Shop' then... the smell out of the packet knocked me out.

I am going to do an IPA with loads of Columbus at the end and cascade.
