Hopfen Hefe

Post by WishboneBrewery » Fri Mar 12, 2010 9:30 pm

How's this for a hoppy wheat beer?
Low ABV with hopefully the chalky bitterness of Nelson Sauvin but finished with Hersbrucker and a touch of choc Wheat for colour and added maltiness.
Yeast would be from a couple of Schneider Weisse bottles.

Code: Select all

Hopfen Hefe

Fermentable	Colour	lb: oz	Grams	Ratio
Golden Promise	5 EBC	4 lbs. 0.2 oz	1820 grams	48.9%
Wheat Malt	3.5 EBC	4 lbs. 0.2 oz	1820 grams	48.9%
Chocolate Wheat Malt	820 EBC	0 lbs. 2.8 oz	80 grams	2.2%

Hop Variety	Type	Alpha	Time	lb: oz	grams	Ratio
Nelson Sauvin	Whole	11.3 %	60 mins	0 lbs. 1.1 oz	30 grams	42.9%
Hallertauer Hersbrucker	Whole	2.9 %	15 mins	0 lbs. 0.7 oz	20 grams	28.6%
Hallertauer Hersbrucker	Whole	2.9 %	0 mins	0 lbs. 0.7 oz	20 grams	28.6%

Final Volume:	23	Litres
Original Gravity:	1.037
Final Gravity:	1.009
Alcohol Content:	3.6%	ABV
Total Liquor:	32	Litres
Mash Liquor:	9.3	Litres
Mash Efficiency:	75	%
Bitterness:	41	EBU
Colour:	26	EBC
Is a Bock just a darker version of a Hefe? Would a good helping of Chocolate Wheat be good for this?

Cheers :)

Have you tried the Brooklyner Schneider Hopfen Weiss?

I think it looks good, my instinct would be to bump up the gravity and replace half of the pale with Munich to make it a bit more robust to help give a base to the hops.

Dark version of a hefe is a Dunkelweizen. They tend to use carafa for colouring without much roasty stout-like character and Munich & dark wheat for body and fullness.

Bock is a strong amber lager, no wheat.

Then there's Weizendoppelbock (no I didn't make that up :=P) Aventinus is the well known one (and it's delicious). Basically a strong Dunkelweizen.

Thanks for the clarification, I was just clarifying myself at Wikipedia about the subject... I had half an idea I was talking out of my arse ;)
I haven't tried the Brooklyner Schneider Hopfen Weiss (If I didn't have to think about buying paint and curtains I'd order a bottle from somewhere).
I'm just getting ideas for some quick drinking brews once we've moved house, a Wheat Beer would be a good start to get some bottled stock in the house while I brew some other stuff.

Weizendoppelbock / Dunkelweizen... that's what I was meaning, you hit the nail on the head with 'Aventinus' it is a classy beer :)
