The weekend sees another christmas brew being made.

I wil be losing my " brew " virginity in four areas 8 what a floosie huh) during the brew and appreciate any comments you may have.

First the fermentables

22 litre brew length based on 75% eficiency.

4500 Pale
400 Aromatic
340 Dark crystal
225 wheat
500 brown sugar

The hoppy things

25 g centennial ( 11.45) @60
20 g cascade (6.7) @15
10 g Chinook (10,4)@15
25 g cascade @ 5

yeast harvested from a bottle of youngs special ale-

this should give me the following according to beersmith


Estimated OG of 1067
Estimated FG of 1017 ( this is debatable as i do not know the attenuation or strain of yeast youngs use in their bottle conditioning. of the yeast, although 1017 sounds rather high)
I should end up with something around 6.5% and with an IBU of 39 ish

The malt is weighed and mixed 8 and now inside as the frosts are starting to come. so noting can be taken away. i do have the possibility to add some malts though if needs be.

The hops are not yet set in stone, i can change this as i need to. I have plenty to chose from but fancied using the C hops as everyone seems to rave about them.

The yeast was made into a 100 ml starter with the dregs of 1 bottle. 3 days later this was stepped up into a 1 litre starter, and 2 days ago this was stepped into a 5 litre starter. it has crawled out of the starter busket several times and does not appear to resemble the commercial dry yeasts in behaviour.

If anyone has an idea as to what it might be then please let me have some info.

If there is anything glaringly wrong with the recipe then there is still time to fix it. i have dark malts, munich amber and acidulated available of that helps anyone who thinks the recipe needs a tweak.

The sugar is there as i am told it will add something to the brew.

this is the FIRSt time i have used sugar extra to a brew, it is the first time i have used Aromatic malt, the first time i have harvested yeast from a bottle, and the first time i have used any of the hops listed!

Chirs-X1 helped me a great deal with this one. He helped me to harvest the yeast and to build it up into a decent sized starter 8 although others were involved with this. He was good enough to PM me and tell me the original amount of aromatic malt i had planned was really not going to do much as the percentage was too low.

I am hoping for a nce tasty, malty brew
