One last brew before I move?...

Post by bigdave » Tue Nov 02, 2010 10:34 pm

Im about to become very very busy with buying houses, packing boxes etc... but recon I can find time for one last brew before all hell breaks loose!.. I have a reasonable stock of hops but no grain so what recipe would you suggest using some of this little lot (all pellets): 375g Fuggles, 250g Target, 225g Chinook, 50g Saaz? the Saaz are whole hops.

Something that travels and keeps well?

A big grainy, hoppy, bittery stouty type thing. Imperial stout or a strong porter? Put all those fuggles with a bit of target to good use?

I think I need to try a few stouts to decide what I want to brew. I really enjoy dry and coffee stout but the last imperial I supped was Durham Brewery's Temptation and tasted like paint stripper!

Looks good to me! At 5.7% that'll be some session!

I don't know why but I imagined it would get lower than 1.021 though I suppose that will be determined by yeast and mash temp...?

What yeast is recommended for stouts? I'm assuming a lower mash temp (maybe 62-63º) would produce a dryer taste?

By the time Ive got little man to bed I only have time for 2-3 so a session would be 4 on a friday night.

That's a lot of roasted malts! I hope you like it tasting like espresso.

I'd double the flaked barley.

Im aiming for a dry irish/coffee stout. perhaps knock the roasted barley down to 7% and the flaked upto 13%?

Well Guinness is 20% FB and that's hardly thick. Depends what you're after i suppose!
