I've used this hop combo in kits before and really liked it, so fancied brewing a hoppy low ABV AG brew for early summer quaffing!
I know the figures are balanced, but will the real beer be over hoppy (astringent)? I'm thinking that the yeast will help?

Sounds great. The crystal is the key and with the pale, dark and carapils adding up to 7-8% of the grain bill it should balance out.
I recently brewed something similar with Amarillo, Cascade and Earl Grey Tea, with the following grist. I went lower at 2.3% and more bitter at 37 IBU and at wasn't astringent at all. Although I mashed with full liquor (no sparge) at 69% for an hour, to get maximum body from non fermentables. I didn't drink like 2.3%.

Wheat Malt(3.9 EBC) 7.7 %

1.027 and 1.009 using Safale S-04.
