An update for you..
not adding salts to the mash has had no effect whatsoever, beer has turned out beautifully. Sharp citrus from the Chinook with a long twangy finish.
The yeast has dropped the gravity from 1044 to 1009 making it a touch dry..Its got a very slight haze so not as gin clear as I would like but very very drinkable
