Was having a look through my hops to see what I could use up and found a whole lot of Amarillo. Going to give it a go in a simple single hop amber up to about 56 IBU's, but was wondering if it's complex or interesting enough on its own? Recipe below;

The only reason I wouldn't use Amarillo for bittering is because it is relatively popular and so more expensive and sometimes harder to find. I personally like Warrior to bitter (or Magnum) because you get a nice clean bitter flavor. The Amarillo I save for late/dry hopping. By the way, I like the grain bill; it will be a nice beer whatever you decide to do. As it turns out, I have one on tap at home right now although if I remember correctly I used Amarillo and Simcoe along with the afore mentioned Warrior. I also boiled down some of the first runnings just to jack up the toffee/caramel flavors a bit.
