Thanks, Jocky. I will add those to the library and give them a try! Together with Erics hints regarding yeast and water this should get me in the right direction.

Marc, those profiles were of Brewlab yeasts.

Brewlab's Burton and Scottish Borders yeasts are sold by the Malt Miller, although both are currently out of stock with them.

It is more than ten years since I pitched a dry yeast to ferment an ale.
Without patience, life becomes difficult and the sooner it's finished, the better.
