mr.c, I don't prime in the keg. I just gas it up from a cylinder.

Andy, pictures please :D

Hi Mr.c, yep, sugar will be fine. You bottling? Hefe's a lot less hassle when bottled as you can swirl the yeast into the beer for that authentic look. Me, I have to shake the keg every week

Qvestion -

What would opinion be about using flaked wheat instead of malted wheat?

Hi Matt,

I've never used flaked wheat but if you have some why not try it and see. I'm not sure you'd want to replace all the malted wheat with flaked though.

Frothy, flaked wheat is unmalted and would be more at home in a Belgian wit bier rather than a hefeweizen. It will give a different flavour than you would expect in a hefe. It also has no diastic power and is likely to gum up your mash a bit - my efficiency fell by 10% when using unmalted wheat.

your hydrometer is reading 1018 (1.018) i wouldn't say its ready for kegging yet. i would wait till it drops to 10121014ish

Hi Mr.c,

I'd say you have a gravity of 1.020 which is still quite high. If this was a style of beer that was supposed to be clear I'd say leave it for another week but as it's hefe I reckon you should put it in the barrel and don't worry about priming it. There's still a fair amount of sugar left to ferment.

That's a nice looking hefe. 8)
