Hook Norton Best Bitter

Post by iowalad » Fri Feb 15, 2008 3:02 am

Will be giving another Graham Wheeler recipe a go this weekend.

23 liters

Pale Malt 1,300 g
Mild Malt 1,300 g
Crystal 170 g
Flaked Maize 270 g
Black Malt 17g
White sugar 340g

Start of boil
Challenger hops 34 g

Last 15 minutes

Goldings hops 10g
Irish Moss 10g

Mash schedule: 66C
Boil Time: 90 minutes
OG 1035
FG 1006

ABV 3.9%

Bitterness units 22
Color: 21 EBC 11 SRM

The beer is dry hopped as well. Graham suggests a couple of cones of Goldings to the cask of at the time of the filling.

I will be substituting First Gold in place of Challenger. Contemplating using F.G. throughout.

Yeast = Wyeast 1318 I have been happy with this yeast for both a dark mild and a nice ordinary bitter.

My first experience with adjuncts (other than small amounts of sugar). It doesn't sound like flaked maize needs anything special (will be using in my next two brews as well).

I also plan on focusing on beer clarity this brew. My last couple of lighter colored beers have been very hazy. It drops out eventually. Think I have my water treatment sorted, campden tablet, boil to reduce carbonates and add in some calcium sulphate.

Contemplating buying/trying some polyclar to see if it helps the haze issue as well.
